Rich in protein and fiber, lentils are known for not only making trips to the bathroom regular, keeping weight in check, as well as lowering cholesterol and sugar levels in blood. If this is not enough, then imagine the taste of the soup of biblical proportions which made Jacob the favorite son of Isaac. This feel-good recipe might be even better than original because it can be made without fat for which traditional recipe calls for. But do not run away yet. Bring veggie stock to boil (see veggie stock recipe)
Add:
2 cups lentils (cooked approximitaly for 30 minutes or until soft)
Water from cooked lentils
2 cups cooked potatoes
Water from cooked potatoes
1 onion cut into small cubes and browned in a hot skillet (brown in a small amount of hot water or veggie stock; stir to prevent from sticking to the skillet)
1 Tbsp oregano
1 tsp cumin
Salt and pepper to taste
Simmer for 15 minutes
